Easy Cooking: Rice Pilaf

>Alright love muffins I know it has been a while since I have brought you a delicious treat but now Easy Cooking is back. This week we are going to look at Rice Pilaf. It sounds kind of complicated but it is actually a very simple dish. If you are trying to impress someone for dinner and you want to be a little “fancy” like you can really cook, try this treat. Most people may take an ordinary ice cream scoop to serve it and maybe serve with asparagus. But we are on our way to a recession so use green beans. See the recipe after the jump
Ingredients:
2 tablespoons butter
1/3 cup thin spaghetti, broken into 1 inch pieces, about 1/6 of a 1 pound box of dried pasta
3/4 cup white enriched rice
1 1/2 cups chicken broth or water
Salt
Directions:
In a medium saucepan melt butter over moderate heat. Add thin spaghetti bits and rice and brown for 3 to 5 minutes. Add broth or water, salt and pepper, and bring liquid to a full boil. Cover pot and reduce heat to simmer and cook rice 18 minutes. Fluff with a fork and serve.

seems simple enough. definitely trying it. Oh and I know this has nothing to do with rice pilaf but what ever happened to the Miss Beck posts? I loved them. I thought she was funny and the products she suggested were actually really good. Just asking.
