Easy Cooking: Mexicali Chicken Breasts

Love muffins, when I came across this recipe I just knew it was too simple to be true. Every thing is just ready made and you just have to put everything together. My favorite part is that there are only three ingredients you need. Be creative with the sides or just go with something more simple than this, like a baked potato. Put that oven into use. Take me higher lord! If all recipes were this easy I might turn into Martha Stewart Jr. Well not quite, but you all get what I’m saying. See the recipe after the jump-
Ingredients:
* Boneless/skinless chicken breasts (1 for each person)
* Jar of salsa
* Bag of shredded cheddar cheese
Directions:
Preheat oven to 375. Place chicken breasts in baking pan and spoon some salsa on top. Place in oven for 30-45 minutes (according to whether frozen or not). Sprinkle cheddar cheese over all and bake an additional 5 minutes, or until cheese is nice and bubbly.

Oh damn!! I make chicken like this all the time. So easy and so yummy. Just be sure to use a good salsa. It makes a difference!

Yes, Ashlee did make this last night. I tried to add to the night and make some guacamole but it didn’t taste as good!
